I realize that MuvUnder Cover looks for covers using the "Album Artist" tag instead of the "Artist" tag and I'd like to know why that choice over the regular and most used "Artist" tag?

When dealing with album covers you have to remember that you are searching for an "album cover", not an "artist cover". Because you are combining tracks into an album, in the case of "various artists" (which comes from "AlbumArtist") you want the display of that album to contain all the tracks from that album. If you use "Artist", you get the individual artist for each track. This would give you an album displayed for each album + artist instead of one album displayed for each Album + AlbumArtist.
Basically, if the album is not a various artist or compilation album, the albumartist and artist are most likely equivalent. If they are a compilation or various artist album, then that will display to group the tracks and properly search for the correct album art.
